Our philosophy in the kitchen can be condensed into one word: essence. A word that means respecting the identity of every type of fish so that we can all stillhave the privilege of recognizing the authentic flavour of a fresh local lobster, of a turbot, of a razor clam from the Venetian lagoon, without any interferences in flavour. The only dressing allowed is the olive oil that the owner produces on the family olive trees grove in Marostica.
